This Lavender Lemonade cocktail is a Vodka based cocktail and a perfect one to make over summer after a day at the beach in Bunbury, Margaret River, Dunsborough and beyond!
Ingredients
Lavender Simple Syrup:
• 4 tablespoons of Lavender flowers (we picked ours fresh from the garden!)
• 1 cup of water
• 1 ¼ cups of sugar
Home made lemonade:
• 8 lemons
• 4 cups of water
• Vodka
Instructions
Step 1:
Prepare the lavender syrup by mixing the flowers, water and sugar together in pot and set on the stove on medium heat, stirring occasionally. Heat on the stove for about 10 minutes until it is simmering around the sides of the pot (do not let it boil!).
Take the pot off the stove and let the lavender infuse into the syrup as it cools to room temperature for 20 minutes.
Once cool, strain the syrup and discard the lavender flowers.
Pour the syrup straight into your jug.
Step 2:
Peel and juice all the lemons.
Add the peels, lemon juice and 4 cups of water to a blend and blend on medium speed for about 1 minute until the peels are small and the lemonade is cloudy.
Use a strainer to strain the blended lemonade into your jug.
Discard the leftover lemon peel.
Step 1:
In the jug, mix the lemonade and lavender syrup well and let it chill in the fridge until you want to serve it.
Once it is chilled, pour it into serving glasses and at a shot of vodka, ice and garnish to each glass (we used lemon and a sprig of lavender on ours)
